Tasty Tuesday: Summer Salads

Tasty Tuesday: Summer Salads

During the hot summer months some days I just don’t feel like cooking a big meal or even turning the oven on because it’s so hot. These delicious summer salads are super easy to make and help us keep our cool.

1) Amagansett Corn Salad

This Amagansett Corn Salad from Food 52 epitomizes the freshness of summer with the combination of corn, cherry tomatoes and sugar snap peas. Those are three of my favorite summer crops and I love how they’ve combined them in this salad.

2) Mediterranean Summer Salad

Not your typical Greek salad, the blend of orzo pasta, pine nuts, Greek olives, feta cheese and spinach in this Mediterranean Summer Salad from My Recipes makes for a scrumptious light lunch or dinner.

3) Grilled Flank Steak Salad with Goat Cheese

Simply delicious – this Grilled Flank Steak Salad from Victory or Death in the Kitchen is both easy to make and very filling. I love the addition of the goat cheese and the ease of marinating the meat overnight then throwing it on the grill for a few minutes.

4) Triple Berry Summer Salad

My kids and I all love berries of any variety and this Triple Berry Summer Salad from Iowa Girl Eats is a great way to also get my kids to eat spinach. The almonds and goat cheese really complement this salad nicely.

5) Quinoa Fruit Salad with Honey Lime Dressing

We can’t seem to get enough fruit or berries during the summer months and I love the addition of quinoa to this Quinoa Fruit Salad with Honey Lime Dressing from Two Peas & Their Pod.  This light and refreshing salad is perfect for those hot summer days.

6) Strawberry, Quinoa and Spinach Caprese Salad

Strawberries seem to be on my grocery list every week during the summer and this Strawberry Quinoa and Spinach Caprese Salad from Closet Cooking is a great way to add some variety to our strawberry dishes.

7) Cuban Avocado, Watercress and Pineapple Salad

The caramelized pineapple in this Cuban Avocado, Watercress and Pineapple Salad from Food 52 makes for an absolutely gorgeous presentation and the caramelization process is super easy. Whip up this salad for company and you’re sure to impress!
