Tasty Tuesday: Summer Salads

Tasty Tuesday: Summer Salads

During the hot summer months some days I just don’t feel like cooking a big meal or even turning the oven on because it’s so hot. These delicious summer salads are super easy to make and help us keep our cool.

1) Amagansett Corn Salad

This Amagansett Corn Salad from Food 52 epitomizes the freshness of summer with the combination of corn, cherry tomatoes and sugar snap peas. Those are three of my favorite summer crops and I love how they’ve combined them in this salad.

2) Mediterranean Summer Salad

Not your typical Greek salad, the blend of orzo pasta, pine nuts, Greek olives, feta cheese and spinach in this Mediterranean Summer Salad from My Recipes makes for a scrumptious light lunch or dinner.

3) Grilled Flank Steak Salad with Goat Cheese

Simply delicious – this Grilled Flank Steak Salad from Victory or Death in the Kitchen is both easy to make and very filling. I love the addition of the goat cheese and the ease of marinating the meat overnight then throwing it on the grill for a few minutes.

4) Triple Berry Summer Salad

My kids and I all love berries of any variety and this Triple Berry Summer Salad from Iowa Girl Eats is a great way to also get my kids to eat spinach. The almonds and goat cheese really complement this salad nicely.

5) Quinoa Fruit Salad with Honey Lime Dressing

We can’t seem to get enough fruit or berries during the summer months and I love the addition of quinoa to this Quinoa Fruit Salad with Honey Lime Dressing from Two Peas & Their Pod.  This light and refreshing salad is perfect for those hot summer days.

6) Strawberry, Quinoa and Spinach Caprese Salad

Strawberries seem to be on my grocery list every week during the summer and this Strawberry Quinoa and Spinach Caprese Salad from Closet Cooking is a great way to add some variety to our strawberry dishes.

7) Cuban Avocado, Watercress and Pineapple Salad

The caramelized pineapple in this Cuban Avocado, Watercress and Pineapple Salad from Food 52 makes for an absolutely gorgeous presentation and the caramelization process is super easy. Whip up this salad for company and you’re sure to impress!

Tasty Tuesday: Refreshing Summer Drinks

Tasty Tuesday: Refreshing Summer Drinks

We haven’t had any relief from the heat here in northwest Florida for weeks so we’ve been looking for all kinds of ways to try and stay cool. These fabulous cold and refreshing summer drinks will do the trick – mix up a batch of your favorite chocolate or fruity summer drink and get cool!

1) Cantaloupe Sangria

This delicious white wine Cantaloupe Sangria from Fast Drink Recipes is super simple to make with frozen grapes, pureed cantaloupe and lemon slices with your favorite chilled Pinot Grigio. I think I’m going to have to make a pitcher for myself this weekend!

2) Watermelon Frosty

Grab some fresh, juicy watermelon and you could make this scrumptious Watermelon Frosty from Lunch Box Bunch! If you’d like a more adult type version you could turn yours into a Watermelon Margarita.

3) Orange Julius

This Orange Julius knockoff recipe is inspired by one of my all time favorite drinks, I have fond memories of hanging out at the mall with my friends and drinking these delicious orange smoothies. Apparently Orange Julius stores still exist, just sadly none in my area anymore, who knew?

4) Layered Fruit Gazpacho

Gaia Health Blog’s Layered Fruit Gazpacho is almost too pretty to drink but the mix of raspberries, cantaloupe and kiwi sounds just as mouth watering as it is healthy. I can’t wait to try this one!

5) Raspberry Cordial

Mix up a big pitcher of these Raspberry Cordials from BBC Good Food for your next summer gathering and you’re sure to have a hit on your hands. Just three simple ingredients and this refreshing drink will even keep for a few months in a sealed container in the fridge.

6) Frozen Hot Chocolate

All you need are a few simple ingredients and a blender to make this delicious Frozen Hot Chocolate from Girl Cooks World and it’s sure to help cool you down on a hot summer day! My kids really love this one and they tell me it’s better than ice cream.

7) Caramel, Peach & Berry Knickerbocker

For an adult summer beverage this Caramel, Peach & Berry Knickerbocker from BBC Good Food has quite a few ingredients but it seems pretty easy to put together and looks absolutely gorgeous.

I highly recommend Plan to Eat for a great place to store all your favorite recipes! Check it out with a free trial and see how easy it is to add recipes from the Internet, plan meals for your family and even print out a handy grocery list.

Protect Your Family this Summer with Banana Boat

Disclosure – “I participated in an Influencer Activation on behalf of Influence Central for Banana Boat®. I received product samples to facilitate my review and a promotional item to thank me for my participation.”

Cousins at the Pool

During these warm summer months my five kiddos enjoy spending as much time as possible outside doing all sorts of fun things like going to the beach, swimming and riding their bikes. When they can get together with their cousins from out of state and do those things they’re thrilled and our whole extended family has a blast! Here they are with a bunch of their cousins hanging out in the condominium pool during their visit. In order to make sure they all have an enjoyable time for the whole weekend they’re here we have to protect their skin from getting a sunburn.

My kids are in summer camp during the week where they also do lots of outdoor activities there and since you should apply an ounce of sunscreen to their entire bodies at least 30 minutes before going outside, we make sure to apply it before we leave for camp in the mornings and the kids take bottles with them so they can reapply every two hours or immediately after swimming.

Banana Boat Sunscreen

Banana Boat has three new sunscreen formulas out that I am very happy to have been able to try. The new SunComfort™ Clear UltraMist® Sunscreen moisturizes skin that has been dried by the sun and chlorine, and it also allows sand to brush off easily. The newly reformulated Dry Oil Clear UltraMist® Sunscreen now includes argan oil. This one is my new favorite since the dry oil formula is lightweight and doesn’t leave your skin with that greasy feel. They’ve also  launched a new Sport Performance® Lotion Sunscreen with Powerstay Technology™ for sport enthusiasts and active people to be sweat and water resistant for up to 80 minutes.
