Sugar Surprise Cookies

  • 1 package Betty Crocker Sugar Cookie Mix
  • 1 package Andes Mints
  • ½ cup or 1 stick of butter or margarine, softened
  • 1 egg
  • Optional - icing and sprinkles
  1. Preheat oven to 375 degrees.
  2. Stir together contents of packaged sugar cookie mix, softened butter and egg.
  3. Scoop a tablespoon of dough and flatten it slightly in your hand. Place an Andes mint in the center and form the dough around the mint like a "package".
  4. Tip: The dough is sticky so it helps to moisten your fingers with water as needed to help shape the dough.
  5. Place the cookies two inches apart on an ungreased cookie sheet and bake for 7 to 9 minutes or until the edges are golden brown.
  6. If desired, ice with your favorite icing and decorate with sprinkles.
