The kids and I adore cake pops of any sort and these Watermelon Cake Pops are absolutely fabulous! They’re so cute and so delicious that everybody loves them. Cake pops are always a great way to please a crowd too since you can get so many out of a batch!

Simply mix a few drops of pink food coloring in with a can of frosting then add your cake crumbles and mini chocolate chips to make the watermelon center.

Roll your cake mixture into small balls and place them in the freezer for 30 minutes so they’ll be firm and will be easy to dip into the chocolate.

Melt and mix both green and light green chocolate wafers to get the perfect color of green for the candy coating on your cake pops.

Dip the end of your lollipop sticks into the melted chocolate and then into the bottom of your cake balls and allow to harden for about five minutes. Next dip the cake pops into the melted chocolate and swirl the lollipop stick to evenly coat the pop. Let them dry in a cake pop stand and then serve!

  1. Grease a 9 X 13" baking pan and preheat your oven to 350°
  2. Beat your butter and sugar with a hand mixer until fluffy
  3. Add in your flour, eggs, vanilla, milk, and baking powder and mix again
  4. Add in your pink food coloring
  5. Pour into your baking pan and bake for 20-25 minutes
  6. Once cooked, scoop out your cake into a large mixing bowl, but leave the edges
  7. Let cool in the freezer for about 20-30 minutes
  8. Now mix your can of frosting with a couple drops of pink food coloring and mix it into your cake crumbles, along with your mini chocolate chips
  9. Roll your cake mix into small balls and place in the freezer for 30 minutes
  10. In a microwave safe bowl, mix your green and light green chocolate melts and cook on 50% power for 4-5 minutes, lightly stirring every 30 seconds until melted
  11. Dip the end of your lollipop sticks into your melted chocolate and then into the bottom of you cake balls and let harden for about 5 minutes
  12. Now dip your cake pops into your green melted chocolate, spin your cake pop stick until evenly covered
  13. Let dry in a cake pop stand
