Delicious Pumpkin Parfait Recipe

We all love yogurt in our house and there is nothing better than a delicious yogurt parfait for breakfast or for dessert and this pumpkin parfait recipe is perfect for fall.  Pumpkin pie is one of my favorite fall treats so I absolutely love this unique use for all those lovely pie pumpkins that are on sale this season.

This pumpkin parfait recipe is so easy to make and the presentation is beautiful so you can serve it to guests if you’d like but your family is sure to love it as well!

Ingredients
  • 2 cups Vanilla Yogurt
  • 1 cup 100% Pure Pumpkin
  • 1 tbs honey
  • ½ tsp Pumpkin Pie Spice (cinnamon, ginger, nutmeg, allspice)
  • Granola
  • 1 can Extra Creamy Reddi Whip
Instructions
  1. In a mixing bowl combine 1 cup vanilla yogurt, prepared pumpkin, honey and pumpkin pie spice, reserving the other cup of vanilla yogurt.
  2. Stir until all ingredients are incorporated.
  3. In a mini trifle or parfait glass place your vanilla yogurt.
  4. Top the vanilla yogurt with granola.
  5. Next layer on the pumpkin yogurt.
  6. Top with a dollop of whipped cream.
  7. Serve immediately.

  • 1 container Liberte Mediterranee French Vanilla yogurt
  • ½ cup granola
  • 5 strawberries, sliced
Instructions
  1. Place the Liberte Mediterranee French Vanilla yogurt in the bottom of a glass and top with your favorite granola.
  2. Slice five large strawberries and put them on top of the granola. Grab a spoon and enjoy!

My kids get two meals a day plus a snack at school but they always seem to be “starving” by the time they get home so I like to have quick and healthy snacks ready for them when they get home. I found this fruit and yogurt wrap recipe at the Yoplait website along with a bunch of other great ideas. I love how simple these are to make and that they’re filling enough to tide the kids over until dinner, plus the kids have enjoyed helping me make them and that’s always lots of fun.

Ingredients
  • 11/4 cup creamy peanut butter
  • 1 container strawberry Yoplait Greek 100 Whips! yogurt
  • 4 flour tortillas for soft tacos (6 inch)
  • 4 strawberries, sliced
  • 1 small banana
Instructions
  1. Spread 1 tablespoon peanut butter and 1 tablespoon yogurt evenly over each tortilla.
  2. Top tortillas with strawberry and banana slices.
  3. Roll up tortillas and secure with toothpicks. Serve with remaining yogurt for dipping.

Have You Tried Dannon Oikos Greek Yogurt?

We’re huge yogurt fans at our house but I have to be honest – the last time I brought home Greek yogurt for the kids they all turned their noses up at it and refused to eat more than a bite.  I love that Greek yogurt is lower in fat and higher in protein than regular yogurt but I was nervous about getting the kids to try it again.  I’d heard good things about the new Dannon Oikos Greek yogurt so I thought we could give it a try again, and since my five year old quadruplets can’t read the word “Greek” I knew I could get them to give it a shot.  There are so many flavors to choose from that I was able to get something to suit everyone.  Check out these available flavors:

Hubby is a beekeeper so I thought he’d like the honey variety, but he really didn’t – said the combination just wasn’t for him, turns out he loves the blueberry.  One of my boys decided that he really likes the blueberry also, and the rest of us (including mommy) favor the traditional strawberry with the fruit mixed into the yogurt.  I am SO happy that they like it because Dannon Oikos Greek yogurt has twice the protein of regular low-fat yogurt, plus the fruit on the bottom varieties have 0% fat and the blended varieties contain only about 3% fat.

So what makes Greek yogurt so different?  Well it’s thicker and creamier than regular yogurt because of the authentic Greek straining process that removes some of the liquid part of the yogurt, or whey, and leaves more of the milk solids.  That process is also the reason that Greek yogurt is lower in fat and higher in protein since removing the fatty whey liquids leaves a denser yogurt with a higher level of protein.

I also really love to cook with Greek yogurt, because it’s so rich and creamy it is perfect for using in recipes and makes a great base for marinades.  I cannot wait to try this recipe for Tandoori Chicken – it’s one of my all time favorite dishes and the nearest Indian food restaurant is an hour away from me.  Check out the Dannon Oikos website for more great recipes, and while you’re at it you may want to go ahead and ‘like’ Oikos on Facebook so you can keep an eye out for promotions and coupons.
