Chicken & Avocado Taco Salad Boats and PayPal Cash Giveaway

With five young kids it’s often difficult to please everybody at the same time when it comes to dinner, but we all agree on tacos! They’re so easy to prepare and the kids enjoy them so much that we have taco night a couple times a month. This week I decided to do something a little different and put a spin on our usual taco night with these delicious Chicken & Avocado Taco Salad Boats and I’m thrilled to report that the kids all ate them up as well. It’s so nice to find a meal that is healthy, tasty and that everyone will eat!

Although it may look difficult it’s actually pretty easy to work with avocados. First take a sharp knife and slice all the way around the avocado, split it open and remove the pit. Next you can either go ahead and cut it into slices inside the skin, being careful not to pierce the outer skin, then use a spoon to separate the meaty part from the skin, or use the spoon and separate it first then cut into slices after removing the skin.

  • 2 tablespoons vegetable oil
  • 3 boneless skinless chicken breasts
  • 1 package (1 oz) Old El Paso™ taco seasoning mix
  • 1 package (4.7 oz) Old El Paso™ Stand 'N Stuff™ soft flour tortillas (8 tortillas)
  • 2 ripe avocados, peeled, pitted and diced
  • 1 tomato, diced
  • 1 head lettuce
  • ½ cup sour cream
Instructions
  1. In 10-inch stainless steel or cast iron skillet, heat 2 tablespoons vegetable oil over medium-high heat until oil is hot. Add chicken and cook 2 minutes on each side to brown chicken. Add 2 tablespoons water, sprinkle both sides of chicken with taco seasoning, and loosely cover skillet with foil or lid. Cook an additional 3 minutes, flipping chicken if necessary.
  2. While chicken is cooking in skillet, warm taco shells and gather toppings. Remove cooked chicken from skillet and thinly slice. Fill tortillas with chicken, lettuce, tomatoes, avocado and sour cream

Beef. It’s What for Dinner at Our House!

With five young kids in the house I don’t get out a lot, but it’s super easy to entertain friends at home – all you have to do is throw a few steaks on the grill and you’ve got a party! The best thing about grilling out is that you can hang out and socialize with your friends while cooking and you don’t have to spend all your time in the kitchen. This super simple meal went together in just a few minutes and it was both delicious and healthy.

These ribeye steaks were marinated in low sodium Dale’s sauce for the afternoon in a zip bag in the refrigerator then grilled for just a few minutes on each side. We topped ours with slices of provolone cheese and you could make yours extra special by sauteing onions and mushrooms and placing them between the steak and the cheese. The steaks were served with a ceasar salad and bacon wrapped potatoes that were also cooked on the grill. Drizzle a little olive oil on the potatoes before wrapping them in partially cooked bacon, hold the bacon in place with toothpicks and wrap the potatoes in aluminum foil before placing on the grill.

In addition to being quick and easy to prepare, beef is also a healthy meal since it contains 10 essential nutrients including iron, choline, selenium, zinc, phosphorous, niacin, riboflavin, vitamins B6 and B12, and of course protein. It’s also a low calorie meal choice and most lean cuts have less fat than skinless chicken thighs. My favorite thing though is that I always know the kids will eat their dinner without any fuss when I serve them beef, in fact we have taco night at the house several times a month and the kids really enjoy getting to put their own tacos together just the way they like them.

We’ll put all the ‘fixins’ out on the table and let them choose their own favorites. Plus, we always make extra taco meat using lean ground beef on taco night so there is enough leftover for after school snacks the next day. The kids love to scoop it up with tortilla chips for a quick snack and I love that all I have to do is warm it up a little, so everybody is happy!

Trying Out Udi’s New Gluten Free Tortillas

I’ve seen gluten free products make a big difference in some of my friends’ lives so I’ve been trying out lots of different gluten free products as well. I previously had the impression that gluten free products must be bland and tasteless, but I’ve been very pleasantly surprised by the whole line of Udi’s gluten free products. They have so many different products to choose from and they’ve all been very tasty, even my five picky kids eat them up.

A couple times a month we have taco night at our house – it’s one of the kids favorite meals and is something they can all agree on, especially since I set out all the ingredients and let them prepare their own tacos the way they like them. This week we tried out the new Udi’s gluten free tortillas and they were every bit as good as the regular variety.

Udi’s gluten free tortillas are available in two sizes and they’re soft, fresh and tasty! The larger size is perfect for fajitas and burritos, and the smaller size is great for tacos. I like to warm up my tortillas by fanning them out on a plate, placing a moist paper towel on top and then I microwave them for about 20 seconds. The whole family inhaled these last night and we’re already looking forward to having them again soon.
