Menu Plan Monday ~ May 28th

Since the kids are out of school today and their summer camp starts tomorrow I’m taking the girls with me for a day out today while the boys hang out with daddy working on some yard projects.  The girls and I plan to hit a few stores and have a nice lunch then visit a friend before heading home.  I’ll be sure to share our shopping trips with you later!

The kids are so proud to have harvested their very first big batch of green beans so we’re having our favorite Easy One Skillet Chicken Dinner for supper tonight!  It’s super simple to make and I’m sure the kids will eat the green beans since they had a hand in growing them.  I’m also looking forward to using some of our garden tomatoes with our tacos tomorrow night.

Where did the first half of the month go?  It’s really moving fast and with just two weeks left of school for the kids I’m getting a little nervous about how to keep them entertained all summer.  It does seem like they’re getting off a little easy since they’re apparently already done with homework ;)

Menu Plan Monday ~ May 7th

I got home last night from a blogging conference over the weekend and was so tired I could barely move and now I have another meeting to go to tonight – it is weeks like this that make me SO happy to have a menu plan prepared in advance.  I’ve been planning our meals in advance based on what we have on hand and/or what is on sale for the week for almost two years now and I’m still amazed at how much time and money it saves us!

Menu Plan Monday ~ April 30th

This week is going to be busier than usual since one kid has a dentist appointment, another has a doctor appointment and I’m leaving town on Friday for the Brandcation blogging conference.  It’s weeks like this that I am so grateful to have a menu plan and a freezer full of home cooked meals to choose from!  We save a bunch of money because we’re not trying to figure out what to have for supper on the way home from wherever, which made it too easy to stop and grab fast food.  We can even change our minds and mix or match the meals depending on how we feel or how the day is going because there is a list of options available.  If you haven’t tried menu planning yet I highly recommend that you look into it – it not only saves us money but also greatly reduces the stress level around dinner time.

I can’t believe there is only one month left of school for the kids!  Time sure seems to be flying by and we have so much going on this week that I’m sure it will fly by too.  Of course it’s weeks like this that make me so grateful to have a meal plan and a freezer full of home cooked meals – I’m still amazed at how much time, money and stress it saves us just from having a plan in advance!

We have a bunch of outdoor chores planned for this week like getting the garden tilled and ready to go and we’ve got to do a lawn mower repair and cut the grass before it gets out of hand.  It’s always nice on super busy weeks like this one to have a bunch of homemade meals ready to go in the freezer!  Here’s what we have planned on the menu for this week:

This week is spring break for the kids and we’re planning a bunch of gardening projects, activities and a day trip to visit the USS Alabama at Battleship Memorial Park so I’ve lined up some easy meals for the week from items that we already have available in the freezer.  I’m looking forward to hanging out with the kids and getting to sleep in a little this week, but I’m also pretty sure I’ll be ready for school again by the end of the week ;)

Menu Plan Monday ~ March 19th

I'm super excited about getting our garden started with all this beautiful weather we've been having!  The kids helped us plant several different types of tomato seeds (Early Girl, Better Boy, Cherry and Beefsteak) and they're just thrilled that they're coming up now.  I'm going to have to sneak in there quick and get them pruned when the kids aren't looking just to avoid any drama ;)  I know this looks like a lot of plants but they won't all make it and the kids can eat their weight in tomatoes, plus we love having extra to give away.  How have you been enjoying this early spring weather?

Menu Plan Monday ~ March 12th

Only two of the tomato seeds that we planted with the kids a couple weeks ago have come up – we’re not sure if maybe they got planted too deep or if there was some issue with the soil we used from the farm next door.  We love fresh tomatoes so we’ve planted some more seeds this weekend hoping we’ll have better luck.  Usually we buy seedlings from the store but we were hoping that starting our own seeds would give us more plants this year and help save a few bucks at the same time.  I’ll let you know how this batch turns out!
