Everybody Loves Bacon – Malibu Chicken Recipe

Everything goes better with bacon right? Well the “Everybody Loves Bacon” event is going on at Winn Dixie right now and when they challenged me to post a bacon recipe I knew immediately what I wanted to make. I’ve been making this scrumptious Malibu Chicken dish for years but I haven’t had it in quite awhile so I was super excited to make it for dinner. It’s easy to make but looks very elegant so I like to serve it for company as it always gets lots of compliments.

Everybody Loves Bacon - Malibu Chicken Recipe

This scrumptious Malibu Chicken recipe is super simple to make, yet so elegant that it's a favorite to make for company!

Ingredients
  • 4 chicken breasts
  • 8 slices bacon
  • ½ cup soy sauce
  • 3 Tablespoons sugar
  • 2 cloves garlic, grated or minced or ¼ tsp garlic powder
  • 2 Tablespoons grated fresh ginger or ½ tsp powdered ginger
  • 2 Tablespoons toasted sesame oil or canola oil
  • 8 slices muenster cheese
Instructions
  1. Whisk soy sauce and sugar in a small bowl until sugar is completely dissolved. Stir in garlic, ginger and oil.
  2. Place chicken and marinade in a resealable bag and shake to coat completely. Refrigerate for 2 to 8 hours, turning occasionally.
  3. Precook bacon until it starts to brown, do not completely crisp as it will finish cooking in the oven.
  4. Wrap each chicken breast with two strips of bacon and place on foil lined baking sheet.
  5. Bake at 400 degrees for 20 to 25 minutes or until no longer pink in the center.
  6. Place two muenster cheese slices on top of each chicken breast and return to oven for a couple minutes until melted. Serve.

Garlic & Herb Chicken Pesto Ciabatta Sandwich
Prep Time: 5 minutes
Makes: 1 serving

Ingredients:
1 Hillshire Farm® Grilled Essentials Garlic & Herb Chicken Breast
1 ciabatta roll, split
2 tablespoons prepared pesto
2 lettuce leaves
1 slice mozzarella cheese
4 slices plum tomatoes

Directions:
1. Heat chicken according to package directions.
2. Spread both sides of roll with pesto.
3. Fill with lettuce, cheese, tomato and chicken. Serve immediately.

Tastes From Home Frito-Lay Recipe Contest & Giveaway

Lemon Tarragon Chicken

I was recently invited to participate in the Tastes from Home with Frito-Lay Recipe Contest where I was asked to create an original recipe inspired by either Frito-Lay Regional Flavors or a dish that reminds me of my region and/or home.  Being born and raised in the deep south it’s really not too difficult to find inspiration in local flavors, the big problem was how to decide on just one of the many ideas that kept popping up in my mind!  How about Pecan Crusted Catfish, or Cajun Shrimp and Cheese Grits, or Blackened Tilapia?  The weight of the decision grew until I thought I’d spent almost as long deciding on the names of my children.  

Once I began to feel that it would be pretty presumptuous of me to try to “improve” on any of these traditional recipes I realized that the basis of many good southern dishes is fresh herbs and seasonings and a cast iron skillet, so I decided to start there and get creative.  Using a few simple ingredients that I had on hand, including lemons and parsley from the farmers market, I created this zesty Lemon Tarragon Chicken.  The trick is to use a pre-heated cast iron skillet so the chicken cooks up fast, keeping it tender and juicy on the inside while it sears in the flavors on the outside.

This Lemon Tarragon Chicken cooks up fast in a cast iron skillet, keeping it tender and juicy on the inside while it sears in the flavors on the outside.

Ingredients
  • 4 boneless skinless chicken breasts
  • 2 cloves garlic, minced
  • ½ teaspoon dried tarragon
  • 2 tablespoons minced parsley
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • Pepper to taste
Instructions
  1. Place the chicken breasts between waxed paper or plastic wrap and pound until thin with a kitchen mallet then place in a sealable plastic bag.
  2. Combine all remaining ingredients in a small bowl and mix well. Pour over chicken in bag, seal and shake to cover all of the pieces. Marinate in the refrigerator for at least one hour.
  3. Heat an ungreased cast iron skillet over medium heat for five minutes. Cook the chicken breasts for three minutes on each side.

 

Since I have five young children (5-year-old BBGG quadruplets and a 7-year-old son) I cut the chicken breasts in half after pounding them so that we ended up with 8 smaller servings. The meal was a hit with everyone, and it’s rare that we can please all the kids at one time so that makes it a home run in my book!  Please let me know what you think of this fast and easy dish!
