We all love yogurt in our house and there is nothing better than a delicious yogurt parfait for breakfast or for dessert and this pumpkin parfait recipe is perfect for fall.  Pumpkin pie is one of my favorite fall treats so I absolutely love this unique use for all those lovely pie pumpkins that are on sale this season.

This pumpkin parfait recipe is so easy to make and the presentation is beautiful so you can serve it to guests if you’d like but your family is sure to love it as well!

Serves: 3 Parfaits
Ingredients
  • 2 cups Vanilla Yogurt
  • 1 cup 100% Pure Pumpkin
  • 1 tbs honey
  • ½ tsp Pumpkin Pie Spice (cinnamon, ginger, nutmeg, allspice)
  • Granola
  • 1 can Extra Creamy Reddi Whip
Instructions
  1. In a mixing bowl combine 1 cup vanilla yogurt, prepared pumpkin, honey and pumpkin pie spice, reserving the other cup of vanilla yogurt.
  2. Stir until all ingredients are incorporated.
  3. In a mini trifle or parfait glass place your vanilla yogurt.
  4. Top the vanilla yogurt with granola.
  5. Next layer on the pumpkin yogurt.
  6. Top with a dollop of whipped cream.
  7. Serve immediately.

Heart Healthy Breakfast

This is National Heart Health Month and I wanted to share with you how easy it is to put together a delicious heart healthy breakfast. Tasty Tuesday: Better With Blueberries

The blueberries have been plentiful this year and they started coming in early so we even have a bunch in the freezer.  Blueberries keep very well in the freezer and we like to pop’m out and eat them by the handful just as they are, but there are also so many yummy blueberry recipes available that I put together this roundup of a variety of different things to make with them.

1) Simple Blueberry Cobbler

This Simple Blueberry Cobbler recipe is my own guest post at $5 Dinners and it’s my go to dessert during blueberry season.  It’s delicious and very easy to make!

2) Blueberry Hand Pies

These Blueberry Hand Pies from Camille Styles look absolutely scrumptious and are great for creating individual servings or for eating on the go.

3) Blueberry Coffee Cake

Coffee cake is one of my all time favorite desserts and I can’t wait to try out this Blueberry Coffee Cake version from Joy of Baking.

Enjoying Our Tyson Breakfast Bread Bowls

Have you seen the new Tyson Breakfast Bread Bowls yet? We just recently had a chance to try them out and I can't wait to tell you all about them!

One of my favorite budget saving tricks is to plan a breakfast for dinner meal once a week. Breakfast entrees are typically much cheaper than traditional dinner entrees because the meat or protein portion of the meal – sausage, ham, bacon, eggs – is generally less expensive. Not only is it good for the budget, but the kids really enjoy getting breakfast for supper once a week and they think it's lots of fun!

I hadn't heard of the Tyson Breakfast Bread Bowls but they looked really yummy and I jumped at the chance to give them a taste test. We went to Sam's Club and bought a big box for $9.68. They're available in both sausage, egg and cheese and bacon, egg and cheese varieties, however my store only had the sausage variety in stock so that's the kind that we tried.

This big box has six individual packages inside, each containing two bread bowls. That was a little confusing for me because I thought that meant that two bread bowls would be a serving, but a serving size is just one bread bowl and it really will fill you up!

You parents out there will understand that the big test is waiting to see if the kids will eat the stuff we put in front of them! I was a little nervous about that with these because they look different than what the kids are used to being served, but my boys all loved them right away!

My two girls were a little more standoffish, they really just wanted to play at the table until they saw the boys wolfing them down. Once the girls realized that their brothers liked them, they started eating theirs too! We actually all really liked them, and I thoroughly enjoyed the ease of putting a nice hot dinner on the table in just a few minutes using the microwave. We gave the kids forks but they weren't necessary as the bread bowls, similar to a breakfast biscuit, are really easy to hold and even eat on the run! My family gives them 14 thumbs up!
