Freezer Cooking 101: Breakfast Sandwich Edition

Mornings are super busy around our house – after getting myself up and ready for work I have to herd cats, I mean wake my five kiddos and get them ready for school. By the time I drop them off at the bus stop and head on into the office a couple hours have passed and I’m hungry! The kids get breakfast at school so they’re set and I always have granola bars at my desk in case of emergency, but really I’d like a nice hot breakfast too without having to hit the drive through.

Freezer Cooking 101: Breakfast Sandwich Edition

Homemade breakfast sandwiches are so much better tasting than drive through anyway, even after they’ve been frozen! I like to make a dozen of these sausage, egg and cheese English muffins at a time and pop them in the freezer so I can grab one and run in the morning. Tip – since sandwich bags aren’t intended for freezer use I always package these in individual sandwich bags, then place them in a large freezer bag before freezing. They stay fresher longer this way, of course they never last that long anyway before its time to make a new batch. Also, I prefer to use silicone egg rings when frying the eggs so they are a nice round shape that fits easily on the sandwich.

Make a dozen sausage, egg and cheese sandwiches on English muffins then freeze and reheat! About a minute in the microwave and breakfast is ready. I usually alternate between sausage and bacon sandwiches, so before these are all gone I’ll make another batch of bacon egg and cheese sandwiches, maybe on biscuits instead of English muffins, in order to get a little variety.

Ingredients
  • 2 - 6 ct packages English Muffins
  • 1½ pounds sausage or 12 sausage patties
  • Dozen eggs
  • 12 slices cheddar or American cheese
Instructions
  1. Split English muffins and lightly toast, if desired.
  2. Divide sausage and hand form into 12 patties, pan fry until browned on both sides.
  3. Fry the eggs in the remaining sausage grease, salt and pepper to taste.
  4. Assemble breakfast sandwiches by placing an egg, sausage patty and slice of cheese in the middle of each English Muffin.
  5. Place individual breakfast sandwiches in sandwich bags, then place packaged sandwiches in a larger freezer bag before freezing.
  6. To reheat, warm in the microwave on high for about one minute.
