Tyson Oriental Chicken Salad

My five kiddos are only 15 months apart, the quads are seven and my oldest is eight, so they’re all basically the same age but they have such different tastes in food (and everything else!) that it can be hard to put together a meal that pleases everyone. I recently went shopping at Sam’s Club where I got to try some Tyson Chicken Fries and I picked up a big bag to take home.

I made Oriental salads using a bag of salad greens that I also picked up at Sam’s, mandarin oranges on top, sprinkled with fried rice noodles and chicken fries on top. My parents were over for dinner and they really enjoyed the salads, plus they were impressed that the kids ate them up as well. My two pickiest eaters decided they didn’t want salads so they simply ate the chicken fries and ketchup with a few mandarin oranges for dessert.

The chicken fries only took 12 minutes in the oven, they were done in a hurry and they were delicious. Crispy on the outside, juicy white meat chicken on the inside, and the whole family was happy with supper. What could be better than that?

We seem to always be on the go with five little ones under eight who all like to run in different directions, so it can be hard at times to put a home cooked meal on the table. Plus, with so many different personalities in the house, it’s even more difficult to make quick meals that everyone will enjoy.

I was thrilled to go shopping at Sam’s Club for Tyson fully cooked sausage and incorporate it into a recipe because the kids all love sausage and I knew it would be a big hit. I decided to make a cheesy breakfast casserole for brunch over the weekend and this precooked sausage really shaved some time off the whole meal prep. Instead of having to wait until the sausage was cooked to put all the ingredients together and pop it in the oven, all I had to do was cut up some of the frozen sausage patties add the egg mixture and I was ready to go play with the kids while brunch was cooking.

The breakfast casserole was such a hit, and the sausage so tasty that the kids wanted more of it right away so for dinner I made some biscuits and warmed up some sausage patties in a skillet. It was so fast and easy to prepare that I’m glad it comes in a big bag because I have a feeling that we’ll be having it often. In addition to being yummy, the precooked sausage is so convenient that I think it will also be perfect for taking on camping and fishing trips with the family.

Easy Breakfast Casserole with Tyson Fully Cooked Sausage
Ingredients
  • 4 fully cooked sausage patties
  • 8 eggs
  • ¼ cup shredded cheese (I used a 3 cheese mixture)
  • Salt and pepper to taste

Instructions
  1. Cut the fully cooked sausage patties into bite sized pieces.
  2. Beat the eggs in a small bowl then add the cheese and salt and pepper.
  3. Place the sausage pieces in the bottom of a greased glass pie pan, then pour the egg mixture over the top.
  4. Bake at 375 degrees for 25 to 30 minutes or until firm.

Fast and easy to make for breakfast, brunch or anytime snack!
Ingredients
  • 1 egg
  • 1 small flour or corn tortilla
  • ¼ cup shredded cheddar cheese
  • dash salt
  • dash pepper

Instructions
  1. Preheat oven to 400 degrees.
  2. Place tortilla on a baking sheet and sprinkle ¼ cup shredded cheddar cheese in a circle near the outer edge of the tortilla.
  3. Break an egg and drop into the center of the shredded cheese.
  4. Add a dash of salt and pepper.
  5. Bake at 400 degrees for 10 minutes.

To make your own take tortilla bowls spray the inside of a glass or metal bowl with non-stick cooking spray, spray one side of a 9″ or 10″ tortilla, then carefully place it in the bowl with the sprayed side up. Trying Out Udi’s New Gluten Free Tortillas

I’ve seen gluten free products make a big difference in some of my friends’ lives so I’ve been trying out lots of different gluten free products as well. I previously had the impression that gluten free products must be bland and tasteless, but I’ve been very pleasantly surprised by the whole line of Udi’s gluten free products. They have so many different products to choose from and they’ve all been very tasty, even my five picky kids eat them up.

A couple times a month we have taco night at our house – it’s one of the kids favorite meals and is something they can all agree on, especially since I set out all the ingredients and let them prepare their own tacos the way they like them. This week we tried out the new Udi’s gluten free tortillas and they were every bit as good as the regular variety.

Udi’s gluten free tortillas are available in two sizes and they’re soft, fresh and tasty! The larger size is perfect for fajitas and burritos, and the smaller size is great for tacos. I like to warm up my tortillas by fanning them out on a plate, placing a moist paper towel on top and then I microwave them for about 20 seconds. The whole family inhaled these last night and we’re already looking forward to having them again soon.

Quick and Easy Shortcuts to Save Time in the Kitchen

Beef Tacos with Cheese Salad and GuacamoleCooking every day can be one of the biggest drains of our time. At the same time, cooking meals at home is one of the biggest money savers we can find. Let’s face it, some expenses are fixed: rent or mortgages, car payments, cell phone plans, insurance payments. Our food budget is one area that we have some control over, so if we can make our time in the kitchen more efficient, we are well on our way to saving money:

1) Prepping Ground Beef

Ground beef is the basis of a myriad of recipes, but browning it is one of the most time consuming parts of the prep. If you buy ground beef in bulk, consider browning it when you get home. You’ll only have to spend that time once, instead of for each meal, PLUS you get the benefit of not having to use that gas or electricity over and over again. If you tend to use recipes that ask for onions or peppers to be cooked with your beef, make sure to have those on hand so you can do that as well. In a pinch, you can use dried, minced onion instead of fresh. Freeze the cooked ground beef in freezer bags in meal sized portions, and you will have the base of many recipes ready to go. Think how quickly you could throw together tacos or even simple Hamburger Helper on a busy weeknight when the meat is ready to go!

2) Chopping Veggies

Many recipes call for diced onion and/ or peppers. All that dicing takes some time! The good news? These two veggies freeze super well. If you find a deal on buying these items in bulk, make a plan to chop them all at once shortly after purchase. Freeze them in freezer bags in portions you use commonly for recipes, and you have a head start next time a recipe calls for either of these items. In many instances, you can dump the frozen veggies directly into the dish you are preparing. They break up fairly easily when frozen, and will cook right along with your other ingredients straight from frozen in the oven or on the stove. They are also perfect for throwing into omelets, sauces, and the like.

3) Prepping Chicken

As with ground beef, cooking chicken all at once for use in your recipes is a great time saver. I like to take bulk chicken and boil it, then shred or chop it. I put it in freezer safe bags, freeze it and then just pop it out of the freezer for use in dishes such as barbecue chicken sandwiches, chicken fettuccine, chicken salads, casseroles, and so on. Meals come together in minutes when the meat is ready to go!

4) Ham

I love ham and bean soup, ham salad, scalloped potatoes and ham, etc. When the grocery stores offer holiday deals on ham, I like to buy a couple, bake them and chop them into portions I can use for these meals later.

Ease Through the Week With Easy Casseroles

Mexican Lasagna Recipe

Few things say home cooking like the casserole. Casseroles are a staple of American cooking. They are what we pass at potlucks. They are the comfort food we bring to friends who are going through a rough time. They are the welcome we offer to new neighbors. In addition, they can also be a lifesaver when you need a hearty meal. Prepare a few of these on the weekend, minus the baking step, and you have home cooked meals you can pop in the oven on a rushed weeknight…and what weeknight ISN’T rushed? The sky is the limit when it comes to what you can do with casseroles. Here are a few to get you started.

Mexican Lasagna
 

Ingredients
  • 1-1/2 lbs ground beef
  • 2 8oz cans tomato sauce
  • 1 10 oz can diced tomatoes with green chilies
  • 2 Tbsp chili powder
  • 1 Tbsp paprika
  • ¼ tsp seasoned salt
  • 6 corn tortillas
  • 116 oz carton cottage cheese
  • 4 cups shredded Colby Jack cheese

Instructions
  1. Brown ground beef in skillet and drain. Add tomato sauce, diced tomatoes and spices. Heat through.
  2. Grease a 9×13 pan. Layer ingredients in pan as follows: ⅓ of the meat mixture, 2 tortillas, ⅓ of the sauce, cottage cheese and shredded cheese. Repeat twice.
  3. Cover with foil. Bake at 350 for 40 minutes. Let stand for 5 minutes before cutting.

 

Cheesy Ham and Rice Casseroles

Ingredients
  • 1 can cheddar cheese soup
  • 2 cups chopped broccoli
  • 1-1/2 cups instant rice, cooked
  • 1 cup cooked ham, chopped or cubed
  • ⅓ cup sour cream
  • ⅓ cup mayonnaise
  • ⅓ cup crushed crackers, your choice of flavor

Instructions
  1. Mix all ingredients except cracker crumbs.
  2. Grease a 9×13 baking dish.
  3. Transfer ham mixture to dish. Sprinkle with cracker crumbs just before baking.
  4. Bake at 350 for 30 minutes

 

Chicken Bake

Ingredients
  • 6 boneless, skinless chicken breasts
  • 1 can cream of chicken soup
  • 1-1/2 cups cheddar cheese, divided
  • ½ cup milk
  • 1 can refrigerated crescent rolls

Instructions
  1. Grease a 9×13 pan. Place chicken breasts in pan.
  2. In a saucepan, combine, soup, ¾ cup cheddar cheese and milk. Heat over medium heat, constantly stirring, until cheese melts.
  3. Pour over chicken breasts. Just before baking, place uncooked crescent rolls over top. Sprinkle with the rest of the cheddar cheese.
  4. Bake in a 350 degree oven for 30 minutes or until crescent rolls begin to brown.

How to Make Your Own Biscuit Mix

Sure, you can buy pre-made biscuit mix at the store, but why not make your own at home? Having this mix on hand not only makes it a breeze to make biscuits and pancakes (you can use it just like the store bought variety), it also saves you money! Plus, you can read on for a few ideas on how to dress up homemade biscuits and make them into fun snacks and meals.

How to Make Your Own Biscuit Mix
 

Sure, you can buy pre-made biscuit mix at the store, but why not make your own at home? Having this mix on hand not only makes it a breeze to make biscuits and pancakes (you can use it just like the store bought variety), it also saves you money!
Ingredients
  • 12 cups flour
  • 6 Tbsp baking powder
  • 1-1/2 Tbsp salt
  • 1 cup unsalted butter

Instructions
  1. Sift flour, baking powder and salt together and mix thoroughly. Using a pastry blender or two butter knives, cut the butter into the mix. Store in an airtight container. This mix will keep well in the refrigerator for up to 3 months.
  2. To make biscuits, combine 2-1/4 cups of the mix with ⅔ cup milk and mix together until you have a nice soft dough. Roll the dough out onto a floured surface such as a cutting board or counter and cut into biscuits using a biscuit cutter (a clean soup or vegetable can or a drinking glass can substitute in a pinch). Bake on an ungreased cookie sheet at 450 for about 10 minutes.

As promised, here are a few suggestions for enjoying your homemade biscuits (other than as just a tasty accompaniment to a meal)!

• Top with cooked sausage and gravy to make biscuits and gravy

• Crumble into a bowl and mix with pie filling—top with a bit of cinnamon and sugar and a scoop of ice cream for a yummy dessert!

• Cut in half and spread each half with pizza sauce. Top with sausage, pepperoni, and/ or veggies. Sprinkle with cheese and bake for 5-10 minutes until cheese is melted, and voila! You have tiny pizzas!

• Cut in half, add a cooked sausage patty or bacon and a cheese slice, pop in the microwave for a few seconds and you have a quick breakfast.

Udi’s – Full of Taste, Free of Gluten!

Udi's - Full of Taste, Free of Gluten

I previously had a mental impression that gluten free foods were bland and tasteless, but after trying some Udi’s products I was proven wrong. I may never have tried gluten free foods due to that mistaken impression, except a friend of mine who has been bald for most of her adult life due to the sudden onset of alopecia areata. She switched to a gluten free diet a little over a year ago and her hair has been coming back ever since. That is so amazing to me that I had to give some gluten free products a try myself!

Two of my five kids and I are lactose intolerant, so it really isn’t surprising to me how much difference even small changes in your diet can make. But I wondered if they’d be willing to give gluten free a try because they can be picky little eaters. Well I didn’t tell them there was any difference in these products, and they sure didn’t notice! In fact, the Dark Chocolate Brownie Bites and Chocolate Chip Cookies disappeared on the very first day.

I was amazed that the bread really does taste like “real” bread and understand now why Udi’s is the most popular brand of gluten-free baked goods. Since the kids didn’t let me share the brownies or cookies, I’m going to have to say that the Harvest Crunch Muffins and Mighty Bagels were my favorites. I’m also impressed that the Millet Chia Bread was so good considering all the super healthy ingredients it contains.

Because gluten tends to be hard to digest, even if you don’t have a sensitivity to it like my friend (and lots of other people) do, you may well notice a difference yourself from making the switch like being less bloated after eating and having more energy because your body doesn’t have to work as hard to digest your food.
