We participated in a pantry challenge during January and we had SO much stuff left in the freezer and pantry at the end of the month that we extended our challenge into February. That was fabulous for our budget but we haven’t had time to squeeze in a freezer cooking day since then and the picken’s are getting pretty slim around here. Since we desperately needed to fill the freezer back up with some home cooked meals, but still didn’t have a lot of time to spare, we decided to concentrate on some quick and easy entrees with very few ingredients that we know the kids will eat.
Our best local meat prices are usually at Sam’s Club so we typically plan one big meat purchase there each month. This time around we spent $82.06 for 41 pounds of meat – 13 1/2 lbs of boneless chicken breast ($1.97/lb), 13 lbs of drumsticks ($1.02/lb), and 14 1/2 lbs of lean ground beef ($2.98/lb). Normally we really enjoy making our own sauces and marinades but we had a bunch of bottles of marinade and barbecue sauce and we decided to cheat for the sake of simplicity, speed and because we love to shop from our own stockpile! Our goal is to have another freezer cooking day in a couple weeks where we’ll concentrate on some pasta meals and beef dishes to add some more variety.
With this fast and furious freezer cooking day we ended up with a total of 23 entrees portioned for our family of seven for just $3.57 per meal! Here’s what we were able to put in the freezer:
